Water inside the canner forms steam, which replaces the air in the canner. Steam pressure processing works when heat is applied to a sealed pressure canner allowing the pressure to build up in the canner. Using boiling water canners for these foods poses a real risk of botulism poisoning. The bacterium Clostridium bolulinum is destroyed in low-acid foods when they are processed at the correct time and temperature in pressure canners. Pressure canning is the only recommended method for canning meat, poultry, seafood, and vegetables.
